The ownership team behind The Bite Gourmet Burger Restaurant, Brisket Southern BBQ & Bar, and Yardbird Southern Fried Chicken are Stephan (left), Kirtanya (middle) and Thomas von Matt. The three of them started working together in 2013, when they opened The Bite. All three come from a gastronomic background, having worked in hotels and restaurants over the past 14 years. Stephan and Thomas are brothers, Kirtanya is Thomas’ wife. Their specialization lies in gourmet-style American food concepts, specifically creating fantastic menus within a vibrant, street-style ambience. They spent nearly six months traveling throughout The States, learning the ropes about American cuisine, testing out different recipes, variations, techniques & traditions. Now, with three restaurants, they have managed to penetrate the market in Zurich and also see great potential to expand their brands globally.
The Bite, Brisket & Yardbird are all concepts in their prime and are ready to be introduced to the Asian markets. VMHG is the parent company of their restaurant portfolio, and will be the group supporting you on your journey to becoming a partner.
Meet The Team
Stephan is the Operational Director of the group. He studied Hotel Management in Lucerne, Switzerland and has been in the hotel and gastronomy scene for over 12 years, working with brands such as Crowne Plaza, Dukes London and The Dolder Grand Zurich. Having started out in the kitchen, Stephan quickly found his stride in creating the balance between smooth operations and an efficient service structure, so he has managed to streamline the staffing requirements within the organization.
Kirtanya was born in South Africa, grew up in Canada and emigrated to Europe in 2008 at the age of 21. She completed her degree in Berlin where she studied International Business, specializing in marketing & finance. Her background comes from the corporate sphere, having previously worked at KPMG and Allianz, amongst others. Over the years, she's lived in several different countries and has gained an appreciation for international trends as well as design aesthetic.
Thomas is a founding member & Managing Partner at VMHG. Born and raised in Zurich, Switzerland, he found his stride very quickly in the food and beverage industry. He studied Hotel Management in Lucerne, together with Stephan. After running a seasonal beach restaurant in Tuscany in 2010, working as the head chef, he realized that his passion lies in the restaurant industry and wanted to open a restaurant in his home market, Zurich. That is how the first restaurant came to fruition.
Russell has been in the development consultancy and management side of the restaurant and luxury hotel industry for over 20 years. He recently joined VMHG as the Managing Partner for all business in Asia Pacific. Russell completed his Hotel Management studies in the UK and has previously worked with some of the finest hotel groups in the world, such as Mandarin Oriental Hong Kong & Macau, Claridges London, St. Regis Beijing, Ritz-Carlton Bali and Peninsula Group.

Early 2018, VMHG setup a local headquarters located in Bangkok, Thailand, which will be your liaison and trusted partner throughout the journey of becoming a franchisee. This local headquarters is spearheaded by Russell Paine, CEO and Managing Director of VMHG in the Asia-Pacific region. Some of his recent accomplishments involve the rollout of several award-winning F&B concepts in Bangkok, including The Waldorf Astoria, the Tea Lounge Concept in Icon Siam, and Brewski Rooftop Bar at the Raddison Blu. However, his experience has taken him to work on gastronomy projects in Hong Kong, Vietnam, Indonesia, Quatar and also Switzerland.
